The Idea of Limbo
Limbo, at its very fundaments, is often considered to be a state between Heaven and Hell. A place of uncertainty where souls are said to be kept that aren't deserving of eternal damnation but have not been baptised either. It's an idea that's primarily coined in Catholicism and was potentially first mentioned sometime during Medieval times. While popular back then, it's no longer really mentioned in religious texts.
Mortal Limbo in CAOS
The general idea behind Mortal Limbo in the Archieverse and particularly the Chilling Adventures of Sabrina is similar to that of Medieval Catholicism. A place for the souls of those that haven't been baptized-- babies in particular, to be held.
That doesn't seem to be its only purpose however. It is explained it also holds the souls of those that were lost without truly understanding they were. They're also not alone inside this realm, for they are hunted by a soul devouring creature referred to as the Soul-Eater.
